Easy Grilling: Smokey Lemon Thyme Chicken

Smokey Lemon Thyme Grilled Chicken



Simple, healthy and delicious!

You'll need:
4 1/2 pounds chicken thighs (with skin and fat removed)

1 1/2 teaspoon chili powder
1 teaspoon smoked paprika
1 1/4 teaspoon salt
3/4 teaspoon black pepper
1 to 2 teaspoons fresh Lemon
1/4 teaspoon cumin
Thyme Leaves or if using dry use half the amount.

Prepare charcoal grill according your grill's standards.

If you're not using a grill, preheat your oven to 475 degrees F.

1. Combine everything together in a large bowl and set aside and allow chicken to marry for 45 minutes to an hour.  You could also let this sit overnight in the fridge, if desired.

2. Place chicken thighs bone side down on the grill rack.  Allow the chicken to cook with the lid closed with the vents slightly open for10 minutes.

3. After 10 minutes, flip the chicken over and allow the chicken to cook for another 5 to 6 minutes.

4.  Remove the chicken from the grill rack and place into grill safe pan.  Place the pan in the grill and cook with the lid closed for an addition 20 to 25 minutes or until the internal temp reaches 165 degrees F.

If baking in the oven, place chicken bone side down into a medium sized pan.  Bake for 10 minutes  and reduce the temp to 375 degree F.  Allow to bake for addition 25 to 35 minutes or until the internal temp reaches 165 degree F.
