You’ll need:
1 stick of butter or margarine (1/2 cup)
2 cups of gluten free smooth or crunchy peanut butter
1/2 cup brown sugar (or white sugar)
2 cups of confectioners sugar (check label to make sure it’s gluten free)
2 cups chocolate chips (use a real good brand or you would be upset your chocolate didn’t come out right)
1 teaspoon of vanilla extract.
- Place the peanut butter and butter into a microwave safe bowl. Heat for 1 minute or until the butter has completely melted. (time will vary by microwave).
- Remove from microwave, combine the remaining
ingredients (except for the chocolate) and use a large spoon to stir all of the ingredients together until they form a ball of dough that leaves the side of the bowl. Pat into a greased 9x13 pan. - Pour chocolate chips into another microwave safe bowl and microwave at 30 second intervals, stirring after each, until completely melted. Spoon over top of peanut butter mixture and spread evenly.
- Allow to chill in the fridge for 2-3 hours or until the chocolate is hard and the peanut butter is set.
