Gluten Free Peanut Butter Bars (tastes like Reeses)

You’ll need:

1 stick of butter or margarine (1/2 cup)
2 cups of gluten free smooth or crunchy peanut butter
1/2 cup brown sugar (or white sugar)
2 cups of confectioners sugar (check label to make sure it’s gluten free)
2 cups chocolate chips (use a real good brand or you would be upset your chocolate didn’t come out right)
1 teaspoon of vanilla extract.

  1. Place the peanut butter and butter into a microwave safe bowl.  Heat for 1 minute or until the butter has completely melted.  (time will vary by microwave).

  2. Remove from microwave, combine the remaining
ingredients (except for the chocolate) and use a large spoon to stir all of the ingredients together until they form a ball of dough that leaves the side of the bowl. Pat into a greased 9x13 pan.

  3. Pour chocolate chips into another microwave safe bowl and microwave at 30 second intervals, stirring after each, until completely melted. Spoon over top of peanut butter mixture and spread evenly.

  4. Allow to chill in the fridge for 2-3 hours or until the chocolate is hard and the peanut butter is set.
