Gluten Free Chicken and Broccoli



(I used all gluten free ingredients)

3 boneless skinless chicken breasts cut into 1 inch pieces(about 1 and 1/2 lbs)
2 cups frozen or fresh broccoli florettes (if you are using fresh broccoli you will need to blanch them, if you are using frozen broccoli they will need to be completely thawed. You will not need to blanch the frozen broccoli)
3 tablespoons oil
1 onion cut into quarters and separated.

Marinade:
1 tbsp soy sauce
1 tbsp sherry
2 tbsp cornstarch

Sauce:
1 cup low sodium chicken broth
2 tbsp rice vinegar
2 tbsp soy sauce (6 tbsp if you desire a darker sauce)
2 tbsp light brown sugar (i used homemade)
1 ½ tbsp cornstarch
2 tablespoon water


If you are making this a gluten free recipe please make sure all of your ingredients are gluten free.  If you are using white rice, make sure the rice does not contains gluten.  A few brands of white rice are coated with white gluten to make it shine for appearance.  I read this in a food article in a magazine.  If you are not sure about your white rice you could simply use jasmine or basmati rice.

1. In a bowl combine the chicken and all of the ingredients listed for the marinade. Cover and allow to set in the refrigerator for 20 minutes and up to 1 hour.

2. Mix together all the ingredients for the sauce and set aside.

3. Heat your wok or skillet on high and add 2 tablespoons of oil. You can use whatever type of oil you have on hand. Add the chicken and stir fry until the chicken is done. Remove from the pan and set aside.

4. Wipe out the pan and add 2 tablespoons of oil and add the broccoli. Stir fry for 1 minute add the onion. Once you’ve added the onion continue to stir fry until the onion has reached your desired tenderness.

5. Stir the sauce once more to make sure the cornstarch has not settled to the bottom of the bowl, and add the sauce to the pan. Cook until the sauce thickens.

6. Once the sauce thickens add the cooked chicken and cook until the chicken is heated through.

7. Serve on top of white rice
