You’ll need:
12 oz shrimp chopped into small pieces
1 package of wonton wrappers (you will use about 20-22)
1 tablespoon minced garlic
1/4 teaspoon salt
1 small onion diced
1/2 teaspoon black pepper
4 cups chicken or seafood stock
6 cups of water
sliced scallions and crispy fried noodle for garnish
In a bowl combine the shrimp, garlic, salt, pepper & diced onion until everything is well combined.
Place a small teaspoon of the filling in the wonton wrapper. Wet the edges of the wonton noodle entirely. Fold the wonton noodle according to package directions. Repeat this until you have used all of the filling.
Bring the water to a boil and add some of the wontons. Do not over crowd the pot. Once the wontons float to the top of the water remove with a slotted spider and cook the reamining wontons.
Remove the water from the pot and add the chicken stock. Once the stock is hot add the wonton noodles to the stock and serve. Garnish the top with scallions and crispy fried noodles.
