La's Mixed Berry Buckle
STREUSEL
1/3 cup sugar
1/2 cup all purpose flour
1 teaspoon ground cinnamon
1/8 teaspoon salt
1/4 cup (4 tablespoons) butter
CAKE
2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup sugar
1/4 cup (4 tablespoons) butter
1 large egg
1 teaspoon vanilla extract
1/2 cup milk
2 cups fresh or frozen blueberries
Preheat oven to 375°F. Lightly grease and parchment line the bottom of a 9 inch round cake tin.
1. To make the crumble: combine the sugar, flour, cinnamon, and salt in a small bowl. Use a fork to crumble the butter into the flour mixture until course crumbs have formed
2. Combine the flour, baking powder, and salt together in a medium mixing bowl.
3. In a separate bowl, beat together the sugar, butter, egg, and vanilla.
4. Alternately add the flour mixture and buttermilk to the sugar/butter mixture, starting and ending with flour. Add berries, fold into mixture. Do not over mix
5. Pour the batter into the pan and sprinkle the topping over the batter.
6. Bake the cake for 40 to 45 minutes, or until a toothpick or knife inserted into the center comes out clean.
7. Allow to cool for 15 minutes and remove from the pan.
