Gluten Free Eggless Vanilla Pudding



You’ll need:


3 tablespoons cornstarch
2 1/2 teaspoon good vanilla extract
2 cups whole or 2% milk
1/3 cup white sugar
1 1/2 tablespoon unsalted butter (if you’re using salted butter omit the salt)
1/4 salt

In a bowl mix together all the ingredients except for the butter and vanilla.  Heat in a medium sauce pan stirring constantly until the pudding thickens. DO NOT allow this to come to a boil.  Once the pudding thickens, remove from the heat, add the butter and vanilla.  Stir until combined. You can serve this warm or allow this to chill in the fridge.  This will last in the fridge up to 3 days.
