You'll Need:
1/2 pound dried black-eyed peas
3 cups water (for soaking)
4 cups water divided (for cooking plus an additional 2 to 3 cups to add as the water evaporates)
1 onion chopped
1 carrot roughly chopped
3 scallions sliced
1 to 2 tablespoons minced garlic
2 tablespoons oil
1 teaspoon of salt (add more later to taste)
2 teaspoons black pepper
1. In large bowl soak dried beans in 3 cups of water for 3 hours. Drain and remove and debris, if any.
2 . In a large saucepan heat 2 tablespoons oil and add onions. Cook the onions for one minute. Add carrots and cook for one minute.
3. Add garlic and a pinch of salt and cook for 30 seconds.
4. Add 4 cups of hot water, beans and scallions then, bring to a boil.
5, Add 1 teaspoon of salt and 2 teaspoons of black pepper, stir and cover. Reduce the heat to medium high and cook for 30 minutes. After 30 minutes, add 1 cup of water and cook for 30 minutes more.
6. Add 1 cup of water, stir and reduce the heat to lo and cook for 20 minutes more.
Side notes; taste for additional salt and pepper and adjust at the end.
