Mexican Style Pizza


6 Medium flour tortillas (you could use corn)
2 teaspoons oil

8oz refried beans (warmed)
2 cups of Basic Taco Meat

1 ½ cups of salsa
2 cups of shredded cheese of your choice

Toppings:
1 Sliced bell pepper
2 Scallions sliced 
1 tomato diced


Preheat oven to 400 degrees F.
1.     In a medium skillet heat 2 teaspoons of oil and add tortilla shell and cook for about 45 minutes on both sides.  You want to brown the shell slightly. 

2.     On a large cookie sheet, start by laying toasted tortilla shell onto the pan.  Spread approx. 2 to 3 tablespoons warm refried beans across the top of the tortilla shell. 

3.     Then add a couple of tablespoons of taco meat on top of the beans and spread across evenly.

4.     Place tortilla shell on top of the beans and taco meat, then spread a couple of tablespoons of salsa across the top of the tortilla

5.     Sprinkle with cheese and add toppings.

6.     Baked for 10 minutes or until the cheese has melted and the bottom of the pizza has browned.
