Grilled Corn Salad.



Ingredients:
12 yellow corn on cob (not shucked)
1/2 cup diced red onion,
1 tomato chopped with seeds removed
2 tablespoons fresh sweet basil
1/2 teaspoon salt
1/2 teaspoon black pepper

Salad Dressing:
1/4 cup Extra Virgin Olive Oil
2 tablespoons lime juice
3 tablespoons balsamic vinegar
2 1/2 tablespoons honey
1/4 teaspoon salt
1/4 teaspoon black pepper 
1/4 teaspoon crush red pepper

Prepare charcoal grill according to manufacture instructions.

1. Grill the corn until the outsides are char.
2. Shuck and cut all of the corn off the cobs and set a side.
3. In a bowl combine all the salad dressing ingredients together, whisk until emulsified.
4. Add the remaining ingredients to the corn and add desired amount of dressing on the corn and toss together.
5.  Cover and allow to sit for one hour, then serve.

Tip:
You could also combine all of the salad dressing ingredients together in a mason jar and shake for 1 to 2 minutes.
