Grilled Steak and Cheese Sandwiches


Ingredients:
1 pound sirloin steak
2 tablespoons olive oil
2 teaspoon paprika 
1 teaspoon oregano
1/2 teaspoon kosher salt
1 teaspoon black pepper

Garlic butter spread-
6 tablespoons  salted  butter melted
2 tablespoons olive oil
2 teaspoons dried parsley
2 teaspoons garlic powder

1 onion thinly sliced
 1 1/2 cups sliced white mushrooms


12 slices white bread


  1. Heat 2 tablespoons of olive on in a large skillet on a high flame.  Add steak, allow the steak to sit in the pan for a moment to sear.  When the steak begins to sear, move the steak around and cook until the steak is no longer pink and remove from the heat.
  2. Heat an additional 2 tablespoons of olive oil and add onions and cook on medium high for 3 to 4 minutes.  Add mushrooms and cook until the onions are light brown and tender.  Combine together with the steak in a bowl.
  3. in a bowl, mix all of the garlic spread ingredients and set aside.
  4. Brush one side of the bread with the garlic spread.
  5. heat a nonstick skillet on medium heat and place two slices of bread into the pan, buttered side down.  Spread a layer of cheese over both slices of bread.  Add a then even layer of the steak and onion mixture then top with another layer of cheese.  Place another slice of bread on top of each buttered side up. 
  6. Use a piece of foil and cover both of the sandwiches and use a heavy object such as a pan on top of the foil and smash both of the sandwiches down as fast as you can.  (work quickly so they won’t burn.)
  7. Once the bottom of the bread has burned, carefully flip the sandwich and cook until browned.
  8. Remove from the pan and serve.
